Last week’s theme was summer treats to celebrate my vacation, and this week’s theme is ‘back to reality.’ 🙂 I’m not quite back to reality yet, since I’m heading back home today, but I will be needing all these recipes for easy clean-up dinners as I settle back into real life this week.
Even when I’m not getting back to reality from vacation, I always love easy one pot meals, like my Mediterranean Chicken with Olives that I posted on Sunday, and my collection of Quick Dinners. They are great for busy days of all sorts! I may love to putter in the kitchen, but like many of you, I don’t always have the time or energy. And happily these easy meals show that you don’t have to give up flavor or presentation just because you are going for simple.
I have a great vegan lentil stew, a few tasty sheet pan fish dinners, flavorful chicken bakes and sautes, along with great pork chops, smoked meatballs, and a pasta bake! All these easy one pot meals will get dinner on the table with a minimum of fuss.
