Dip your favorite crudites and crackers into my easy garlic goat cheese spread! This cold herbed appetizer can be made in minutes and use just a few ingredients.

Ingredients
8ozgoat cheese
3tbspolive oil
1/4cupmilk,and more if needed
1-2clovesgarlic,grated
1/2tspkosher salt
2-3tbspchopped fresh herbs,such as parsley, thyme, and/or chives
Instructions
In a bowl combine the goat cheese, olive oil, and milk. Using a hand mixer and beat until smooth and light. (Or use a standing mixer and the whisk attachment.)
Mix in 1 clove grated garlic, salt, and fresh herbs. Taste and add more garlic or salt as needed.
Serve immediately.
Notes
No Mixer? If you don't have or don't want to use a mixer, let the cheese warm up to room temperature, 30 minutes or so, and then mix everything together in a bowl with a large spoon.
Storage: Store in the refrigerator for up to 3-4 days in a sealed container. To serve from storage, allow to warm up for 20-30 minutes on the counter then give it a stir and enjoy.
Serving: A drizzle of olive oil and some more of the fresh herbs strewn over the top of the spread makes for a nice presentation.
