Ingredients

  • 8 oz goat cheese
  • 3 tbsp olive oil
  • 1/4 cup milk, and more if needed
  • 1-2 cloves garlic, grated
  • 1/2 tsp kosher salt
  • 2-3 tbsp chopped fresh herbs, such as parsley, thyme, and/or chives

Instructions

  • In a bowl combine the goat cheese, olive oil, and milk. Using a hand mixer and beat until smooth and light. (Or use a standing mixer and the whisk attachment.)
  • Mix in 1 clove grated garlic, salt, and fresh herbs. Taste and add more garlic or salt as needed.
  • Serve immediately.

Notes

  • No Mixer? If you don't have or don't want to use a mixer, let the cheese warm up to room temperature, 30 minutes or so, and then mix everything together in a bowl with a large spoon.
  • Storage: Store in the refrigerator for up to 3-4 days in a sealed container. To serve from storage, allow to warm up for 20-30 minutes on the counter then give it a stir and enjoy.
  • Serving: A drizzle of olive oil and some more of the fresh herbs strewn over the top of the spread makes for a nice presentation.
