Watermelon mixed with lemonade and spiked with mint syrup is a wonderfully refreshing summer beverage, perfect for any hot day. Have it as is, or spike it with a shot of rum for a boozy version.

Ingredients
Mint Syrup
1/2cupmint leaves
1/2cupwater
1/2cupsugar
Lemonade
6tbsplemon juice,about 3 lemons
4cupschopped watermelon
2-3cupsice
Instructions
To make the mint syrup, combine the mint, water, and sugar in a medium saucepan. Bring to a boil over high heat, then lower the heat and let the mixture simmer for 2 minutes. Strain the syrup through a fine mesh sieve and let it cool to room temperature.
Make the lemonade. Add the lemon juice into a 2 cup measure. Add the mint syrup and enough water to reach the 2 cup mark. Then pour the lemonade into a pitcher.
Put the chopped watermelon into the blender and blend until smooth. Strain the watermelon in the fine mesh sieve into the pitcher with the lemonade. Add the ice and stir to combine.
Drink the watermelon mint lemonade as is, or add rum for a spiked lemonade. Alternatively, add 1 1/2 oz of rum to each glass of lemonade you wish to spike.
Notes
Watermelon: I prefer using seeded watermelons to seedless. You will need to scoop out as many of the mature seeds as possible to make blending easier, but the flavor is much more intense. And, yes, strain 'seedless' watermelons. They still have seeds; they are just immature seeds.
Large Batch: Recipe is easily doubled or tripled for parties.
Spiked Lemonade: Add 6 oz of rum to the recipe to make an adult version of the drink.
