Ingredients
6egg yolks
3/4cupgranulated sugar,divided
2cupswhole milk
1/2cupheavy cream
1/4tspcinnamon
pincheachallspice and cloves, plus other pinch if needed
1cupbourbon
whipped creamfor topping
Instructions
Whisk together the egg yolks and 1/2 cup of the sugar in a medium bowl until light.
In a large saucepan, heat the milk, cream, 1/4 cup of sugar, and the spices over medium heat until steaming, about 5 minutes. Take the saucepan off the heat.
While whisking the egg yolks, slowly add some of the steaming milk. Start by adding the milk by drops. Once you've added a few tablespoons you can pour in the milk in a thin stream while whisking. After you've added about 1 cup of the milk to the eggs, begin pouring the egg mixture back into the saucepan, while whisking constantly.
Stir in the bourbon and heat on low until the eggnog is hot and thick. Keep whisking while it is cooking. This will take about 5 minutes more.
Ladle a small amount of the eggnog into 6 glasses and top with whipped cream and a sprinkle of cinnamon.
Notes
For kid-friendly eggnog: Replace the 1 cup of bourbon with 1 cup of whole milk and proceed with the recipe as written.
