6oztequila
1ozorange liqueur
2ozlime juice
1-2ozsimple syrup,or agave syrup
3cupsfrozen watermelon
1cupice cubes
coarse sugar,to rim glasses
Instructions
Initial Prep: Cut up and seed (if needed) a watermelon and freeze it on trays for 2 hours. Once frozen, you can proceed with the recipe or move the chunks to sealed containers.
Make the Drink: Mix together the tequila, orange liqueur, lime juice, and simple syrup. Pour into a blender.
Add watermelon chunks and ice.
Puree, starting on low and increasing the speed, until the mixture is smooth and there are no chunks left.
Optional: Rim glasses with coarse sugar by rubbing the rims with a cut lime and then pressing them into the sugar.
Serve: Spoon the frozen cocktail into each glass and enjoy. If desired, garnish with watermelon slices, lime slices and/or drink umbrellas.
Notes
For a Crowd: I would recommend making a large amount of the tequila/lime mixture ahead and then pureeing it in 4-drink batches as directed in the recipe so as not to overload the blender. (And you can measure out the frozen watermelon and ice into bags or bowls in the freezer to grab and go.)
Orange Liqueur: Such as Grand Marnier, Cointreau, or Triple Sec.
Seeding: If you are using a seeded watermelon you will need to spend some time sorting out the seeds when you are slicing it up for the freezer. I find having a few left doesn't make any difference so long as you puree it smooth enough but try to get most of them out.
Simple Syrup: Mix together 1/2 cup water and 1/2 cup granulated sugar in a small pot. Bring to a boil and stir until the sugar is dissolved. Let cool and store in a sealed container in the refrigerator for up to one month.
