Fresh Blueberry Mojito

This blueberry mojito is full of fresh blueberry and mint flavor, and is an easy and refreshing summer drink perfect for sipping out of a straw.

Ingredients

  • 1/2 cup blueberries
  • 8-10 mint leaves
  • 1 oz agave syrup
  • 1 oz lime juice
  • 3 oz rum
  • 4 oz soda water, approximately
  • ice

Instructions

  • Pour the blueberries into a cocktail shaker. Using a muddler (or the end of a wooden spoon), muddle the blueberries until they are thoroughly broken up and have released their juices.
  • Add the mint and gently press on them, giving them a single twist.
  • Add agave syrup, lime juice, and rum. Shake well.
  • Strain the drink into two ice-filled glasses and top with soda water.
  • Give the drink a stir and garnish with lime slices, extra blueberries, and mint leaves if desired.

Notes

If you don't have any agave syrup, make a quick simple syrup. To make simple syrup, take equal amounts of water and sugar - 1/4 cup water and 1/4 cup granulated sugar - bring them to a boil in a saucepan and let it simmer for 1-2 minutes to dissolve all the sugar. Let cool and use. Extra simple syrup can be put in a sealed container and kept in the refrigerator for a couple of weeks.
