Ingredients
8-10ozwheel of brie
flour,for rolling the pastry
1sheetpackaged puff pastry, thawed overnight in the fridge
3tbspjam,see note
1largeegg
Instructions
Set oven to 400F. Line a baking sheet with parchment paper.
Take your wheel of brie and carefully cut off the top rind.
Lightly dust a rolling surface with flour and unfold your sheet of puff pastry. Dust the top of the pastry with flour as well and roll it out until it's about 11 inches. (Or at least enough to be able to wrap the cheese - check and roll it more if you need to.)
Move the puff pastry to the prepared baking sheet.
Place the brie in the center of the pastry and top with the jam.
Beat the egg with a tablespoon of water and set it out in a bowl with a pastry brush.
Wrap and fold the puff pastry up around the brie, brushing with the egg wash. Press it around to make a neat bundle.
If you want to decorate, use small cutouts or freeform the shapes of your choice. Then press them onto the top of the bundle.
Bake for 40-45 minutes. If it is getting too brown, cover with some foil and continue baking.
Let rest for about 5 minutes then serve with thinly sliced bread, crackers, and/or sliced fruit.
Notes
Brie: Don't bother with a fancy cheese for this recipe. A standard, fairly firm supermarket style will be able to stand up to the oven.
Cutting off the rind: Don't skip this! By removing the top rind you will allow the jam to mingle with cheese and also make it easier for people to get right in there and start scooping out cheese.
Jam: There are a number of jams and fruit toppings which will work with the brie. Raspberry, fig (my favorite), or apricot jam. Cranberry sauce or apple pie filling. Sweet and spicy jams with jalapenos or habaneros. If you're not sure, you can't go wrong with raspberry or apricot jam.
Decorating: If you want to get fancy and decorate you can either trim off the corners of the piece of puff pastry you are wrapping around the brie or use a second piece, depending on how many decorative cutouts you want.
Cutouts: I like to use seasonal decorations on the puff pastry. Leaf stamps are great in the fall and snowflake stamps are fun for winter holidays.
