Ingredients

  • 6 egg yolks
  • 3/4 cup granulated sugar, divided
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 tsp cinnamon
  • pinch each allspice and cloves, plus other pinch if needed
  • 1 cup bourbon
  • whipped cream for topping

Instructions

  • Whisk together the egg yolks and 1/2 cup of the sugar in a medium bowl until light.
  • In a large saucepan, heat the milk, cream, 1/4 cup of sugar, and the spices over medium heat until steaming, about 5 minutes. Take the saucepan off the heat.
  • While whisking the egg yolks, slowly add some of the steaming milk. Start by adding the milk by drops. Once you've added a few tablespoons you can pour in the milk in a thin stream while whisking. After you've added about 1 cup of the milk to the eggs, begin pouring the egg mixture back into the saucepan, while whisking constantly.
  • Stir in the bourbon and heat on low until the eggnog is hot and thick. Keep whisking while it is cooking. This will take about 5 minutes more.
  • Ladle a small amount of the eggnog into 6 glasses and top with whipped cream and a sprinkle of cinnamon.

Notes

For kid-friendly eggnog: Replace the 1 cup of bourbon with 1 cup of whole milk and proceed with the recipe as written.
