Add some sides, a fun and easy appetizer, and a ricotta tart for dessert and you’ll have a delicious meal worthy of a celebration.

Here’s a menu for a small Easter and which would also work for any smaller dinner party or special spring meal.
Menu for a Small Easter
This menu is centered around rack of lamb, one of my favorites for entertaining, adding mashed potatoes and green bean salad to the main course. As a starter, I chose smoked salmon dip and to finish we have a ricotta pie, an Italian take on cheesecake. Each of these dishes can be fully made or prepped ahead of time, leaving you more time with your guests and less time busy in the kitchen.
Caviar and Smoked Salmon Cream Cheese Dip
This whipped spread has it all! Smoked salmon, salty roe, a little spice from the horseradish, and plenty of creamy cheese. Make the dip up to adding the caviar up to a day ahead. Then gently stir in the caviar (or just add it on top) and serve surrounded by sliced cucumbers and crackers.
Blood Orange Moscow Mule
Mix up the base of vodka, citrus, and pomegranate and pop it in the fridge. When you’re ready to have a drink pour it into glasses with ginger beer and enjoy.
Herb Crusted Rack of Lamb
The day before, make your sauce, mix up the breadcrumbs, and marinate the lamb. Shortly before putting out the dip, sear the lamb and put on the breadcrumbs. It can rest on the counter for about 30 minutes before you roast, giving you leeway on your timing.
Cream Cheese Mashed Potatoes
The BEST mashed potatoes! If you want them done ahead, try my make-ahead recipe (which can be easily halved) or put someone to work mashing while you finish the lamb.
Green Bean Salad with Fried Almonds
Tender beans, creamy goat cheese, and the fried almonds are EVERYTHING. Get all the parts cooked up/mixed in the morning and assemble just before dinner.
Italian Lemon Ricotta Pie
And we end with an Italian cheesecake. After a big meal you’ll love this light and lemony dessert.
