After I made my tasty, so much better than store bought, Strawberry Vanilla Bean Syrup, I wanted to make another recipe with it. I had the Chocolate Covered Strawberry Martini (so good! go make it!), but I knew the syrup would be wonderful in any number of other drinks. I’ll probably come up with a few non-alcoholic recipes in the future, but today, though? I have a twist on one of my favorite fizzy drinks, the Tom Collins, only I have a Strawberry Collins and it’s both amazingly good and super easy.
If Sweet and Creamy Strawberry Martinis are not your style, but you do want a fun, strawberry cocktail to enjoy, then this tart and fizzy strawberry collins might just be your thing. I personally adore both of them and have been, every so often, enjoying having one or the other in the evening, choosing depending on my mood and how many limes we have in the house. I do prefer the martini as a little something sweet after dinner and the collins as a little something refreshing before dinner.
Vodka collins has long been a favorite of mine when I’ve wanted a zippy drink that’s not too strong. And, yes, I’ve used the mix! 🙂 It’s a perfectly fine mix that delivers exactly the drink you expect every time and it keeps in the pantry for a good, long time. However, making your own means you can do what you want and change up the flavors, which is even better! Once I made my Strawberry Syrup, I thought it seemed it would provide a perfect twist on the basic collins drink. A few tests later and I was right. This is a tasty and easy strawberry collins. Who needs the mix?

- 3 oz vodka
- 3 oz strawberry vanilla bean syrup
- 1 oz lime juice
- 2 lime wedges
- 7-8 oz club soda
- Add vodka, syrup, lime juice, and ice to a cocktail shaker. Shake until cold and well blended. Divide the cocktail and ice equally between two glasses. Squeeze a lime wedge into each glass and fill with 3-4 oz of chilled club soda. Stir and drink.
